Harvest system and time: Mechanical harvesting from October 15 to November 1.
Extraction: Oleificio Stasi continuous cold cycle within 2 hours of harvest.
Appearance and Density: Clear with high fluidity.
Colore: Intense golden.
Fragrance: Intense fruity, to the nose the impact is powerful and complex, clear notes of fresh grass and elegant floral scents tomato and beans predominant, persistent spicing with a nice spicy note.
Taste: Powerful and balanced denotes a rich vegetable filler herbaceous, tomato, and artichoke are well delineated with a balanced and strong graining bitter and pungent with persistence of aromatic notes in the perception nose.
Use: Raw on turnips and vegetables and raw or cooked vegetable soups, fish prepared in foil, bruschetta with tomatoes and cheese.

Harvest system and time: Mechanical harvesting from October 15 to November 1.
Extraction: Oleificio Stasi continuous cold cycle within 2 hours of harvest.
Appearance and Density: Clear with high fluidity.
Color: Green with elegant golden hues.
Fragrance: Fruity, medium intensity, is ample and elegant, sharp scent of fresh grass, complex notes of artichoke and tomato remarkable floral notes and fresh fruit, long and elegant persistence with notes of almond and cocoa.
Taste: The palate is complex and elegant with persistent vegetable artichoke and tomato, sweet notes of almond and a balanced bitter and spicy, pleasantly persistent hints of aromatic spices elegant and pleasant that enrich the perception nose. Balance and complexity characterize it in its particularity.
Use: Strictly fresh to bring out the complexity and fragrance. It pairs beautifully with lentil, chickpeas and beans, excellent with vegetable soups in general. Cultivar: Blend of Leccino, Frantoio and Ogliarola Salentina.
Harvest system and time: Mechanical harvesting from November 1 to December 15.
Extraction: Oleificio Stasi continuous cold cycle within 2 hours of harvest.
Appearance and Density: Clear with medium fluidity.
Color: Yellow with elegant golden hues.
Fragrance: Light fruity, fresh herbal notes of olive, and hints of artichoke, broad beans and ripe fruit.
Taste: Fresh and clean, immediately denotes a feeling of sweetness with a pleasant and light content of bitter and spicy.
Use: Raw on salads, bruschetta, pinzimonio, fish, for making in oil and mayonaise; in the kitchen excellent for the preparation of sauces, fried and for frying.
